I follow a few health foody Instagrammers and they are always raving on about chia seeds and making the most delicious puddings from them. My Mum and I tried one in Wholefoods at the end of last year, and if you can get over the weird texture, it really is quite yum. So I’ll show you how to make chia seed pudding.
A few fun facts about chia seeds:
They are 20% protein
High in antioxidants
Contain 5 times more calcium than milk
Contain 7 times more Vitamin C than oranges
Contain 3 times more iron than spinach
(you can also just sprinkle on your cereal/ salads/ smoothies/ into bread dough)
To make one pudding you need just 3 things:
2 tablespoons chia seeds
1 banana
1/2 cup unsweetened almond milk (I used Alpro)
Chop up the banana
Add the almond milk and whiz it up until smooth
Add the chia seeds (and I added a small spoon of cinnamon, yum). Whiz it up again.
Pop in the fridge and leave overnight. I doubled the recipe and made 3 small bowls.
Top with your fave healthy toppings and enjoy!
I had mine for breakfast with blueberries and some more banana slices. Enjoy as a dessert/ snack/ light breakfast.
