Apple Cinnamon Muffins
After last week’s apple picking, I woke up the next morning and whipped up these gluten free apple cinnamon muffins in an attempt to get through the huge pile of apples we currently have. I made a couple of coffees, baked these muffins while still in my pyjamas and then got back into bed, they were that easy!
Cinnamon and apple are a match made in heaven, if you ask me. These are perfect washed down with a hot mug of chai tea (I am loving Rude Health hazelnut mylk with mine!). Gluten free bakes can be hard to get right, but the apple makes them stay really moist. They also happen to be vegan if you don’t eat dairy.
Ingredients
250g Gluten free self raising flour (I used Dove’s farm)
2 teaspoons cinnamon
100g caster sugar
2 eggs
200ml almond mylk
2 tablespoon coconut oil, melted
3 or 4 grated apples, depending on how big they are
100g raisins
Method
Sift and mix together the dry ingredients. In a separate bowl, mix the eggs, mylk and oil. Pour the wet ingredients into the dry, and mix well. Stir in the grated apples and raisins. Divide the mix between about 16 muffin cases, or a well oiled non-stick muffin tin. Bake for 25 minutes at 180*C (160*C fan).
