This seems a pretty unlikely combo but my friend Polly was raving about it so I thought I’d give it a go. It tastes delicious, just like a peanut butter and banana milkshake, which you’d never guess from the bright green colour, plus it’s very good for you. Here’s what you need:
– a mahoosive handful of baby leaf spinach
– 1 banana
– a teaspoon of peanut butter (I use crunchy but smooth would probably work even better for a straw)
– a good slug of unsweetened almond milk
Chuck the spinach into the blender and break up the banana on top. Add a generous slosh of almond milk. You basically just want to add it so that it’s not too thick to drink, so you can always add more.
Blend until it is this amazing zingy green colour. I add two ice cubes at this point.
Bon appetit! Enjoy this as a light breakfast during the week, it is so quick to make and quite filling. I usually have it on its own or with a small bowl of museli.
